Easy Do Ahead Chicken

Some of my favorite dishes call for cooked chicken.  It always seems to be those crazy days that I don't have time or wish I had some already cooked chicken.  Here is my simple solution to this issue. 

Crock Pot Do Ahead Chicken
chicken pieces
chicken broth (I used 2 cups)
garlic salt
onions
salt
pepper
Place chicken pieces in the bottom of the crock pot.  Add chicken broth and other seasonings that you like.  Cook on low until chicken is fully cooked. 
Take chicken out and cut up into small pieces. Place on cookie sheet and flash freeze.
(Flash freezing is the freezing technique where you lay out something individually, usually on a cookie sheet, then once it is frozen, you remove from the cookie sheet and store in something more freezer-space-friendly such as a Ziploc or plastic container. This way you can use as little or as much as you want.  They are frozen individually)

Place in a bag and freeze for later uses. 
I love when I actually complete this task because it makes my life a whole lot easier.   Now I have chicken ready for chicken pot pie, chicken cordon bleu casserole, poppy seed chicken, crescent chicken bundles, chicken salad (recipe coming soon) and so many others.
I also like to grill a bunch of chicken breasts, cut and flash freeze.  The crock pot makes for a wonderful fix and forget it way for days when you are busy or trying to multi-task. (Isn't that every day?)
I just have to say I love my crock pot!!
