Smore Cookie Bars

These bars will leave you wanting "Smore".Ha Ha!!  Sorry for the dry humor.  Here are the cookie bars I have been promising all week.  They were really good.  The kids especially liked them when they were still warm and the chocolate was melted.  This is a good alternative to regular smores.  I got this recipe in a email from Betty Crocker.

Smore Cookie Bars
Adapted from Betty Crocker
1 pouch sugar cookie mix (1 lb 1.5 oz Betty Crocker)
1 cup graham cracker crumbs
1 cup butter, melted
2 cups milk chocolate chips
3-4 cups mini marshmellows
Preheat oven to  375 degrees.  In a larger bowl mix sugar cookie mix with the graham cracker crumbs.  Add melted butter and mix until a soft dough forms. Lightly Grease a 9 x 13 pan.   Press dough in the bottom of the pan and bake for 18-20 minutes or until set.
Remove from oven and immediately sprinkle the chocolate chips on top.  Let stand for 3-5 minutes or until the chocolate has melted.  Spread evenly over the top.

Set oven control to broil.  Sprinkle enough marshmellows to thoroughly cover the top.
 Broil for 30-45 seconds. Just until the marshmellows are toasted. (Watch carefully they will brown quickly!) 
Allow to cool for a bit..
Alternative Version: Use refrigerated sugar cookie dough. Press it  in the bottom of the pan and cook 18-20 minutes or until it is set up and then proceed with the recipe above.  (Omit the butter and graham crackers.)  I did this by accident due to the lack of ingredients and my desire to make them that moment! They were still delicious. I just believe that the graham crackers make them more Smore like!
