Blueberry Buckle

Yesterday was one of THOSE days. My watch died and then my daughter dropped the camera and broke it.  Needless to say I am need a new one and fast!! I began my search at Overstock.com. I was amazed at all the digital cameras they carry and the prices are great!!  There are so many great options I still have not made up my mind yet and I am waiting to get hubby's approval.  Enough of my dilema, on to more important items: this great recipe!!
I had never even heard of this before until a friend invited me over for breakfast and made this for me.  It is so delicious and a little different twist on the normal breakfast cake that I just had to make it for my family. It also gave me a chance to use the blueberries my kids and I picked (now that was fun!)  I switched out half of the butter for applesauce, hoping to save a few calories an add some moisture. 
Blueberry Buckle
adapted from Better Homes & Gardens
2 cups flour
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup butter
1/4 cup applesauce
3/4 cup sugar
1 egg
1/2 cup milk
2 cups fresh or frozen blueberries
Preheat oven to 350 degrees. Grease a 9x9 or 8x8 pan. (for a 9x13 size double the recipe).
In a mixing bowl beat the butter, applesauce and sugar together.  Add egg and beat for 3 minutes. Gradually add flour,baking powder, and salt, alternating with the milk.  Beat until smooth. 
Spoon batter into prepared pan. 
Sprinkle with the blueberries.
Topping:
1/2 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 cup butter, softened
Mix ingredients in a bowl. Mix until mixture resembles course crumbs.  (I used a fork to mix it.)
Sprinkle over the top of the blueberries.
Bake for 50-60 minutes or until golden.  Cool slightly; serve warm.
*You can substitute rasperries or other fruit for the blueberries.
