Sloppy Joe Cheese Melts

I made some sloppy joe in the crock pot and then realized we didn't have any buns.  YIKES!!  So I  improvised and it turned out great.  It was a nice change from the normal sandwich.
Sloppy Joe Cheese Melts
adapted from Betty Crocker
Crust:
2 cups Bisquick mix
1 cup milk
1 egg, beaten

Meat mixture or use 1 batch Crockpot Sloppy Joes
1 pound hamburger
1/4 cup chopped green peppers
1/4 cup onion
1 Tablespoon brown sugar
1 1/2 cups ketchup

2 cups shredded cheese

Heat oven to 350 degrees.  Spray a 9 x 13 pan with cooking spray.  In a large bowl stir Bisquick, milk and egg until well mixed.  Pour and spread into the pan.  Bake 15-17 minutes or until a toothpick inserted in the center comes out clean.  Top will not be brown.
If using the crockpot version, just spread it on top. Skip this step. One less thing to do.
Brown hamburger with the green peppers and onion.  Drain. Stir in ketchup and brown sugar and cook until everything is hot.
Spread hot beef mixture over baked bread base. Sprinkle evenly with cheese.
Return to the oven and bake about 5 minutes longer or until the cheese is melted. Cut into squares.
Delicious!!
Hubby was a bit skeptical, but admitted he really liked it!!

  6. Oh, can I just remember how MANY nights I look in the fridge, to find out I ran out of hamburger buns.. This is PERFECT for when I'm struggling for an idea for dinner some night. I've always got ground beef in the freezer, and ketchup and shredded cheese in the fridge.. They're pretty much basic staples 'round here, so I really like this recipe!!
