This recipe originally came from my sister-in-law Nicole many years ago. It was so delicious and a little different that we have been making it ever since. I have adapted it to fit my family's taste over the year. It is probably my husband's favorite salad. A few years ago he had me make it for an open house at his work (we fed over 100 people). I made a couple huge salads and took home nothing.
1 medium purple onion, chopped
½ cup salted sunflower seeds
1 pound bacon, cooked crisp and crumbled
Dressing:
1 cup mayonnaise
½ cup sugar
1/3 cup cider vinegar
1/3 cup Parmesan cheese
1. Mix broccoli, cauliflower, onion, sunflower seeds and bacon together in a large bowl.
2. Mix dressing ingredients together and pour over salad. Stir until well coated.
3. Chill for 2-4 hours.
Note: You can use what ever ratio of broccoli/cauliflower you like. All broccoli or half and half, ect.
The chill time does make a difference. It really allows the flavors to mix nicely.
