I needed a quick side dish and have been craving rice lately. This hit the spot. I feel a little guilty for not using brown rice, but the family is having a hard time adjusting...so I caved!! It had great flavor. I loved the addition of the almonds.
Rice Pilaf
3 Tablespoons butter
1/2 cup onion, diced2 garlic cloves, minced
1 cup rice
1/2 cup celery, diced
2 cups chicken broth
1/2 cup Parmesan cheese
*1/4 cup slivered almonds (optional)
Melt butter and saute onion and garlic until onion is limp. Add the rice and cook for about 5 minutes or until rice starts to look opague. Stir often so rice does not burn. Pour in broth and add almonds(if desired) . Bring to a boil, cover and reduce heat. Simmer for about 20 minutes or until rice is tender. Stir a few times.
When rice is tender stir in the cheese.
*I used beef broth this time because I was serving it with beef. It was good.
I finally got my family used to brown rice, but once in awhile the white rice is a nice change. This looks very good.
