Crock Pot Veggie Soup

I love my crock pot. It makes dinner so easy on days that aren't so easy. I found a crock pot soup recipe that included summer veggies in it. Since it was chilly the other day I decided to try it out. So this is my new recipe for the week or maybe the day. We will see what the rest of the week brings. I changed it a bit. So here is my version.
Crock Pot Veggie Soup
6 cups chicken broth
1 1/2 cups prepared pasta sauce
1 medium onion diced
3 small zucchini sliced and then halved (can use part yellow squash)
2-3 tomatoes diced
1 cup celery diced
1/2 cup carrots
1 Tbs italian seasoning
1/3 cup cannellini or white beans
1/2 cup pasta (to add 20 minutes before serving).
salt and pepper to taste
Garnish with Parmesan cheese
Put every except pasta and cheese in crock pot. Stir well. Cover and cook on low for 6-8 hours. 20 minutes before serving , stir in the raw pasta. Serve with grates Parmesan cheese.
Verdict: It smelled so good while it was cooking. The soup had great flavor. The only complaint was from my husband who asked me to leave out the beans next time.

  1. My hubby had the same comment too :) Too bad I love beans..., I told him we'd split it and I'd add beans to half ;-)
