Cilantro Rice

This is a basic recipe I use for a couple different Mexican dishes.  It is simple and has a great flavor. 
Cilantro Rice
(rice cooker directions)
4 cups water
3 cups rice, rinse and drain several times
4 teaspoons chicken bouillon
4 teaspoons minced garlic
1 can green chilies (small can) or equivalent fresh
1/2 bunch fresh cilantro
3/4 teaspoon salt
1 Tablespoon butter
1/2 cup onion (more if you like)
Blend cilantro, green chilies,onion, garlic and salt together in a food processor or blender.  Place rice in the cooker; add the water, bouillon and the cilantro mixture.  Cut the Tablespoon of butter in fourths and place it on top.  Cover and cook as directed with your rice cooker.
**If you are not using a rice cooker just adjust the amount of water needed.  As with Minute Rice you only need 3 cups of water not 4.  
Stovetop directions:
Bring water to a boil and add all the ingredients. Simmer covered for about 30 minutes.

  3. Yum! Sounds delicious!! I love cilantro and green chilies...sounds similar to Chipotle's except for the addition of green chilies!

  4. Next time I do rice, I am going to try this. I am not much for eating rice. Probably because it has no taste.
