Choco-Mellow Brownies in a Flash

 Saturday was my husbands company party. He decided that since I did all the shopping he would not have me make any dessert. It was a sweet gesture, especially coming from him. So when he left early I changed my mind and had only 1 1/2 hours to get dessert ready for a group. These brownies are so easy and have always been a hit.

Luckily I saved one for a picture.

Choco-Mellow Brownies
2 boxes brownie mix.
Make brownies according to package directions. Pour into a grease cookie sheet.
Bake for 20 minutes.
Take out of oven and cover with marshmellows.

Return to oven and bake 5 minutes more.

Let cool. (Unfortunately I did not have time to let them cool for very long).

Here's where the homemade and fast factor comes in. This recipe came from my Aunt Karen with a few additions of my own.
2 Minute Fudge Frosting
2 cups sugar
1/4 cup white corn syrup
1/2 cup milk
dash salt
1/2 cup butter
4 Tbs cocoa or 2 squares unsweetened chocolate

Put all ingredients in saucepan. Bring to a boil and cook for 2 minutes. Pour into a mixing bowl. Add:
1 tsp vanilla
1 3/4 cup powdered sugar

Beat until it is mixed well. Frosting will be runny.
If you are fast you can pour it over the brownies and then just spread it around. SO EASY! (I am horrible at frosting)

Place brownies in freezer or fridge. To let the frosting set up.




I left them in the freezer for about 25 minutes. The secret I learned this time was to cut them as soon as you take them out of the freezer. It was really easy. Before I have had a terrible time getting them to cut because of the marshmellow layer.

All ready in record time!!
This frosting recipe works well even if you half the recipe and only make 1 box of brownies.
These brownies seem to get better with time. If you have the time make them the day before you need them. Also, if you have room keep them refrigerated. They are good either way though.
