Cake Mix Blondies & A Potential Disaster

I have been baking some very simple desserts for the upcoming Youth Conference this weekend.  I decided that Blondies would be easy and add variety to the mix.  This is an easy semi-homemade version using a cake mix. 
*Just don't try to double the recipe, put it in a cookie sheet and bake.  BIG MISTAKE!!  It raises up way past the edges and falls into the elements of the oven, causing a FIRE!! The good news; nothing was damaged.  Even the garbage can I accidently started in fire.. (it was quite the day!).  The blondies somehow survived.  Everyone loved them.  My son's friend said they were amazing. I told my daughters friend  I am glad something good came out of my disaster and she told me they were a "delicious disaster"!  Lesson learned so I made another double batch, separating it into 2- 9x13 pans.  Much better results.
Cake Mix Blondies
1 white or yellow cake mix
1/2 cup butter, melted
1/4 cup white sugar
1/4 cup water
2 eggs
1 teaspoon vanilla
3/4 cup white chocolate chips
*optional: 3/4 cup nuts
Preheat oven to 350 degrees. 
Grease a 9x13 pan.  Mix all ingredient, except the chocolate chips, until smooth. The batter will be thick.  Mix in the chocolate chips and nuts if desired.  Spread into the prepared dish. (The thick batter requires a bit of patience!).
Bake for about 25-30 minutes or until light brown.
Cool and enjoy!!
*You could also make regular brownies with this recipe.  Use a chocolate cake mix and brown sugar instead of white.

  15. Is there something about this recipe that INVITES disaster? I was measuring out the ingredients, and I didn't have white sugar, so I decided to dissolve the lumpy brown sugar in the water. Came back to the computer to check the ingredient list, and realized that I'd used 1/2 cup each of the water and brown sugar! I poured half of it into a plastic container to put in the fridge, and proceeded with the rest of the recipe. It's in the oven now. Near miss, that one was!
