Corn Bread & Chili Casserole

I want to share with you a famly favorite that I have added canned Chili to. This casserole is great for one of those busy days.  It is quick, simple and delicious. I also consider it a budget friendly meal.  You can feed the family for little. I got the chili on sale for $1.25 a can, corn bread .50 a package (I bought the little ones).  Total cost under $5. Not bad for a great meal. I got this idea  from a friend years ago. She had taken it to a casserole contest at church and won first prize. That night I was the real winner when she presented me with the leftovers to take home. She never gave me the recipe, but I liked it so much that I had to come up with my own version.
Corn Bread & Chili Casserole
3 (15 oz.) cans Chili (use your favorite or homemade).
1 box of corn bread mix (or two of the small ones)
1 cup cheddar cheese, shredded
1/4 cup onions, diced (optional)
Open cans of chili and mix in onions if desired.  Pour into a greased 9 x13 casserole dish. Sprinkle the cheese on top. 
 Make the corn bread according to package directions spoon over top of  the chili mixture.  Spread to even it out.
 Bake at 400 degrees for 25-30 minutes or until the corn bread is done.
Make sure you check the middle to make sure it is done.
This was a huge hit at my house!!
