I couldn't resist making this recipe with the preschool kids yesterday! They are fun, festive and delicious!! The flavor of the pudding gave them an incredible taste. If you are in need of a quick treat to impress this St. Patrick's Day this is a good one!!
St. Patrick's Day Chocolate Chip Cookies

St. Patrick's Day Chocolate Chip Cookies

1 cup soft butter or margarine
3/4 cup brown sugar
1/4 cup sugar
1 3oz box instant pistachio pudding
1 tsp vanilla
Green food coloring (optional)
2 eggs
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chips or white chips
Cream butter, sugars, and pudding mix. Beat in vanilla and eggs (and food coloring if desired). Stir in dry ingredients and chips.
Drop by spoonfuls on lightly greased cookie sheets. Flatten slightly. Bake at 375° for 8-10 minutes.

*I should of put a little bit more coloring in them. When you bake them the color comes out lighter.
