April Fools Day Food Pranks

I picked up something FUN at the store yesterday that I plan to giveaway. Be on the look out for further details to come shortly............
One year for April Fools Day I decided to take myself out of the box and try pulling a prank on my family. I made Colorful Cupcakes a recipe that I found in the Family Fun Magazine It took extra effort because I tried to get it all made while no one was around.  
I told the kids since it was April Fools Day we would be doing something different....having dessert for dinner!!  Unfortunately even though they were young they caught on quick.  I will admit it took alot of work but made for a fun dinner. 
Colorful Cupcakes
The first surprise here: there's not a grain of sugar in these cupcakes. The second surprise: your kids will love them anyway.
Ingredients
MEAT LOAF
1 pound lean ground beef
1/2 cup seasoned bread crumbs (I like parmesan)
1 cup grated Monterey Jack cheese or cheddar
3 tablespoons ketchup
1 egg
1/4 cup minced onion
1/2 teaspoon salt
1/4 teaspoon pepper
POTATO FROSTING
3 cups mashed potatoes
Food coloring
Heat the oven to 375 degrees. Line 12 muffin tin cups with FOIL bake cups.(You have to use foil liners so they can't see the meatloaf!)
In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full).
Place the filled muffin tins on cookie sheets and bake the cupcakes for about 15 minutes or until cooked through.
Divide the mashed potatoes among three small bowls and stir a few drops of food coloring into each batch to create blue, yellow, and pink pastel frostings. Spread a generous dollop on each cupcake. Makes 12 cupcakes.

  1. Oh, how clever!!! Great idea and I bet the kids were shocked but, they ate them! That's a great surprise! Reminds me of the first time I made meatloaf after we were married. It was in a crock pot with mashed potatoes mixed with mayonnaise on top. Inedible and it wasn't even April Fool's Day! Now I'm wondering what you will come up with this year! Thanks for the links!
