Pumpkin Chocolate Chip Pan Cookies

I know that pumpkin is usually a fall ingredient but this is a HUGE family favorite recipe.  It is a treat for us any time of the year and it freezes so well.
Pumpkin Chocolate Chip Pan Cookies
1/2 cup butter
1 1/2 cup sugar
1 egg
1 teaspoon vanilla
1 cup pumpkin
2 1/2 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 cup chocolate chips
Mix together the butter and sugar.  Mix in egg, pumpkin and vanilla.  Sift together remaining ingredients and add gradually.  Stir in chocolate chips.  Pour into a greased cookie sheet.
Bake at 350 degrees for 12-15 minutes.
Yum! I could eat the whole batch myself...

  9. The cinnamon and nutmeg are a nice touch! They look yummy - and with the pumpkin they should be somewhat healthy - right?!

  17. Hi Tiffany! These sound good, and at least you don't have to run the oven as long with temperatures as they are these days... But I had to tell you I tried the Chicken Cordon Bleu Pizza today, and it was a big hit with everybody! We LOVED it, and will definitely make it again someday!... Hope you're enjoying the weekend! ~tina
