Naked Chicken Burrito Bowls

I promised you a very delicious recipe using the Cilantro Rice and this is a great one. I saw it over at Running Away? I'll help you pack. Alexis has some incredible recipes, very entertaining posts, giveaways and many other great things.  This one had me hooked with the title and it did not let me down.  It was so delicious and a great hit at our house.  I adapted it a bit to feed my family of six. The kids loved the idea that they got to make their own.
Naked Chicken Burrito Bowls
4-5 boneless, skinless chicken breasts
1 packet taco seasoning
1 (15 oz.) can black beans, rinsed and drained
2 cups shredded cheddar cheese
1-2 avocados, peeled and sliced
1-2 diced tomatos
diced onion
salsa
sour cream
Mix taco seasoning with water as directed on package.  Place chicken breasts in a large resealable plastic bag, pour seasoning mixture over top and turn to coat.  Refrigerate a minimum of 2 hours to all day. (I ended up marinating mine for 24 hours)
Make Cilantro Rice (Recipe here)(or use plain rice tossed with 2 Tablespoons chopped cilantro and 3 Tablespoons lime juice)
Remove chicken from bag and discard marinade.  Grill chicken. When chicken is thoroughly cooked transfer to a cutting board and cut into small pieces.  Sprinkle with salt and pepper.(optional).
Heat beans in microwave or in a small sauce pan.  You can add a little olive oil and minced garlic. 
 
Assemble burrito bowls: in each bowl, layer rice, chicken, beans, cheese, avocados, onions and tomatoes. Top with salsa and sour cream.
**Later we made quesadillas with the leftovers.
