Simply Alfredo

This is a great simple recipe for when you are craving a delicious Alfredo sauce. I once served it at a etiquette dinner and it was a huge hit.   It is easy and very versatile.  You could add meat and veggies to it or make it more of a garlic sauce.  This time I made it as a side dish and there were no leftovers.
Simply Alfredo
Makes enough sauce for 1 pound of pasta
2 Tablespoons butter
2 cups heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup Parmesan cheese
Melt butter in a sauce pan.  Add the heavy cream and bring to a boil.  Cook until volume is reduced by half, about 5 minutes. Stir in salt and pepper.  Remove from heat and stir in the Parmesan cheese.  Pour over pasta and toss to coat.
*Optional: Add 1 tablespoon minced garlic to the butter and saute for a minute.
This is a great recipe for the Chicken Cordon Bleu Pizza.  Just half the recipe to use as the pizza sauce.
