This was a great "beat the heat" meal. Simple easy and so delicious!! It was a huge hit with the whole family. I was hoping for leftovers and ended up with none.Steak Burritos
1-1 1/2 pounds steak
1 Tablespoon oil
6-8 tortillas
2 cups cilantro rice or plain cooked rice
shredded cheddar cheese
2 ripe avocados, peeled and diced
1 can black beans, drained and rinsed
chopped onions
sliced olives
diced tomatoes
sour cream
salsa
Sprinkle steak with salt and pepper. In a skillet on medium-high heat cook steak in the tablespoon of oil 3-4 minutes on each side or until meat reaches desired doneness. Thinly slice meat across the grain. Place down the center of the heated tortilla. Top with rice, avocado, beans, cheese and your desired preferences. Roll up and serve.
*This would be a great dish for leftover steak. Just heat a bit before serving.
