Cheesecake Bars

I have been into a dessert kick lately if you haven't noticed.  This was something totally new and delicious.  It was a hit with the whole family.  Really simple to make, but looks like it could be complicated. Cheesecake Bars adapted from Taste of Home 2 cups all-purpose flour 1 cup butter, softened 1/2 cup confectioners' sugar FILLING: 1 package (8 ounces) cream cheese, softened 1/2 cup sugar 1 teaspoon vanilla extract 2 eggs, lightly beaten FROSTING: 1-1/2 cups confectioners' sugar 1/4 cup butter, softened 1 teaspoons vanilla extract 4 to 5 teaspoons milk Combine the flour, butter and confectioners' sugar; press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for  20-25 minutes or until golden brown. For filling, in a small bowl, beat the cream cheese, sugar and  extract until smooth. Add eggs; beat on low speed just until  combined. Chicken Enchilada Casserole

We recently had a potluck lunch at work.  Common sense would say,  "Take something tried and true that you know is going to be a sure hit!"  Well you all know me too well  and I tried something I made up and brand new.  Surely, taking a huge risk and not knowing what the results would be.  I must admit I was a bit nervous and lots of thoughts crossed my mind.  So when the time came I put a piece on my plate and walked away, eating alone at my desk, almost to scared to hear the reactions.  Good news, when I walked back to the kitchen for dessert I found my casserole dish empty and everyone was raving about it! YAY!! Success.  It was delicious! I actually made it into two smaller versions so my family ate the second one for dinner later that night.  Once again a BIG HIT!! Chocolate Mint Muddy Buddies

My family loves Muddy Buddies, so I was excited to try out a new version.  Of course my coworkers got to try it out also.  It was a HUGE hit with everyone!  Just the right amount of mint.  I searched for some green candy to add to make it a big more festive and St. Patrick's day like, but had no luck!!  Chocolate Mint Muddy Buddies adapted from Sugary Sweets 12 oz package of milk chocolate chips (or 2 cups) 1/2 cup  Andes Mint Pieces 1 teaspoon oil 10 cups Chex cereal (rice or corn) 2 cups powdered sugar Measure out your cereal and put it into a big bowl. Put the chocolate chips, mint pieces and oil in a bowl.  Melt in the microwave stirring after first minute and then every 30 seconds until the chocolate is melted and smooth (about 2-3 minutes).  Pour the chocolate mixture over the cereal and stir until it is all coated.  Pour the powdered sugar into a gallon baggie and spoon the cereal mixture in to the bag.  Seal and shake until ther pieces are well covered.Pour piec

Red Velvet Brownies

A friend of mine introduced me to red velvet a few months ago and ever since I have been hooked!!   These brownies were delicious!! I however did not have the amount of red food coloring it called for,  but they still turned out red.  I will be making them again!! The frosting was the perfect addition. I guess it is not just for sugar cookies after all!! Red Velvet Brownies from Dessert Now, Dinner Later 3 Tablespoons unsweetened cocoa powder 1 oz red food coloring (or scant 2 Tablespoons I actually only had 1 Tablespoon and  added 1 Tablespoon water for the other Tablespoon and they still turned out a nice red.) 2 tsp vanilla, divided 1/2 cup butter; room temperature 1 1/2 cups sugar 2 large eggs; room temperature 1 1/4 cups flour 1/4 teaspoon salt Preheat oven to 350 degrees.  Grease an 8x8" baking dish.   In a small bowl, slowly stir together the cocoa powder, food coloring, and; 1 teaspoon vanilla into a thick paste until no lumps of cocoa remain.
