Crock Pot Chicken Enchilada Bowls

I was craving enchiladas, but had crazy, busy days so I created this recipe.  It smelled so good while it was cooking and was a huge hit with the family!! Crock Pot Chicken Enchilada Bowls 4-5 chicken breasts  (I used 12 chicken tenders) 1 packet taco seasoning 1 can enchilada sauce 1/2 cup water 3-4 green onions (or 1-2 Tablespoons minced onion) 1 cup shredded cheddar cheese cilantro *Optional cooked rice sour cream additional shredded cheese Place chicken in the crock pot, pour the enchilada sauce, the taco seasoning, onions, water and 1 cups cheese on top. Then if desired add some chopped cilantro on top of that. Cook on low for about 4 hours, stirring every once in awhile. When chicken is cooked through, remove and cut in to pieces or shred it.  Return it to the pot.  Cook your rice. Serve chicken mixture over rice.  Garnish with cheese and sour cream. *Next time I am going to add to the garnishing;  tomatoes and avocado I also think a can of black beans woul

  I remember in Jr High thinking, Why am I here?  I am nobody, but a nerdy, curly haired, big glasses freak.  Thinking what is my purpose?  Letting my insecurities and self doubt totally get the best of me.  Yes, I have come along way since then, but I still let those insecurities get the best of me all the time.   The title of this book says it so well exactly how we feel when those times creep in. I feel very fortunate to have gotten my hands on this book, but only as a loaner.  It is a new release by a brand new author Michelle Wilson   with an official release date of  December 30th . Zuppa Toscana Soup

I love Olive Garden and especially this soup.  I was shocked at how easy it was to make and oh so delicious!!  The kids didn't even notice the kale which I thought added great flavor to the soup.   It was a hit and definitely curved the craving!! Zuppa Toscana Adapted  just a bit from Mom on Time Out 1 lb Italian Sausage (spicy if you prefer more heat) 5-7 slices of bacon 5 medium russet potatoes 2 cups kale, chopped 1 1/2 cups heavy whipping cream 8 cups chicken broth 1/2 large onion 2-3 cloves of garlic, minced Salt and pepper Brown the sausage and break into small pieces.  Drain and set aside.  Cook your bacon and crumble into pieces.  Place on a paper towel to drain.   Slice the potatoes about 1/4 inch thick.  Just try to get them as close to the same size so they cook evenly.  I then cut the slices in half or fourths to make the bite sized pieces.  Put the potatoes, onions, garlic and chicken broth into a large pot.  Cook on medium heat until the potatoes are

Cilantro Lime Chicken

This is a great freezer meal.  You can put is all in a big freezer bag and then dump and run as I call it.  Dump it in the crock pot just before you have to run out the door.  I actually put it all in the night before then pulled it out of the fridge in the morning and started it.  I had some extra kids for dinner and they all loved it.  You just need to make sure you use a slotted spoon when getting the meat mixture out of the crock pot otherwise the juice can be a bit messy.  A great meal! Cilantro Lime Chicken from October Morning 1 1/2 pounds of chicken breast juice from 2 limes 1 bunch fresh cilantro, chopped 1 (16 oz) bag frozen corn 2 minced garlic cloves 1/2  onion, chopped 1 can black beans, drained and rinsed 1 tsp cumin  salt and pepper to taste   Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed. When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours).

White Chocolate Pumpkin Pretzels

White Chocolate Pumpkin Pretzels I came across these cute little things and I know I had to make them. My mom and I made these two nights ago. I hate to report to that you that they ARE as easy as them look and totally worth it. My co-workers loved them!  1 bag of white chocolate  bag of pretzels orange food coloring (mix red and orange) green M&M's We used a double burner to melt our chocolate. We added some sweet condensed milk in order to get the right consistency. Then add the food coloring till you get the right color. (I almost wish I would of went a darker orange)  I used tongs to dip my pretzels in the chocolate then I placed them on parchment paper. Then stick your green M&M's on the pretzel. Bacon Cheddar Chicken Fingers

Bacon and cheese are both huge weaknesses of mine.  So when I saw this recipe I had to try it out. It had delicious flavor.  The coating was a bit hard to get to stick.  Make sure your bacon is finely chopped, your cheese is finely shredded and you are careful when you turn the chicken. I doubled the recipe. It had great flavor and my family loved it! I will be making it again. Bacon Cheddar Chicken Fingers from 2/3 cup  Bisquick                         1/2  cup finely shredded Cheddar cheese                         1/4   cup cooked real bacon bits or pieces (chopped fine)                   1/2   teaspoon  garlic salt                         1/2   teaspoon paprika                         3  boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips                         1   egg, slightly beaten                        

Idaho Style Finger Steaks

  There was a time in my life that we deep fat fried all the time.  Now due to many different reasons I really don't like to deep fat fry things and very rarely do it.  My family had been bugging me for finger steaks.  I mentioned trying them baked this family instantly glared at me and insisted that would not be good.  So I obliged and they were delicious!! I won't deep fry often but this is one thing I will keep doing because we only eat it once in a great while.  The rumor is that Finger Steaks originally started in Idaho (my home state) so how could I not try this recipe out.  It was similar to what my mother in law makes.  Recipe is a definite keeper also!!  Idaho Style Finger Steaks   from The Cooking Channel 1 pound boneless beef sirloin or cube steak (1/2-inch thick) 2 cups buttermilk 1 teaspoon Worcestershire sauce 4 teaspoons salt 2 teaspoons ground black pepper 2 teaspoons garlic salt 2 teaspoons dry mustard 2 teaspoons sweet paprika

Blueberries and Cream Bread

This summer I had the luxury of going to a Blueberry Farm and picking my own blueberries.  The best part is they let you eat all you want while you are picking.  The bushes were loaded and they were delicious.  We ended up picking 11 pounds of blueberries.  We are enjoying them in all sorts of things.  This bread is one of those items.  It was delicious and the cream cheese layer gave it the added touch to put your flavor buds over the edge.  I took it to a work potluck and did not bring any home!! Crock Pot Chicken Caesar Sandwiches

OK this is one of those recipes that is so good your mouth starts to water just thinking about it.  It was simple easy and oh so delicious!! One of the best things I have eaten in awhile!! Crock Pot Chicken Caesar Sandwiches from The Girl Who Ate Everything 4 boneless, skinless chicken breasts (I used 14 chicken tenders) 1 1/2 cups Caesar dressing  3/4 cup Parmesan, shredded 1 tablespoon dried parsley 2 teaspoons pepper 2 cups romaine lettuce, shredded Hamburger buns Put chicken breasts in a single layer in the bottom of the crock pot.  Season with a little salt and pepper. Pour 1-2 cups water into the crock pot and cook on low for 3-4 hours. Remove chicken from slow cooker and shred.. Drain water from crock pot. Return chicken to the crock pot and stir in Caesar dressing, Parmesan, parsley, and pepper. Cook on low for 30 minutes. Spoon mixture on  buns and top with romaine. It was a hit! This is all we had for leftovers.  I made the girls sandwiches with it for lunch

Learning with the VTech Innotab 3 Learning Tablet and a Giveaway!

A few weeks ago I was asked if I would be willing to try out the VTech Innotab 3 Learning Tablet. My youngest daughter was so excited and could not wait to receive it.  Luckily it did not disappoint.  It is a trendy fun learning device. She enjoys the drawing and coloring feature. It has  educational games,creative activities and reading skills while emphasizing fun, all in a compact tablet at an affordable price, making it a great first learning tablet for kids!  The camera is really cool and she can download and play her music on it. She was excited about the E Reader, which will help her with her reading progress. We received a free game download when we registered the device. She picked out a fun spelling game. Using My Creative Side....On a Nerf Party!!

A few months ago I had the privilege to work with an amazing and creative blogger, Erin over at Making Memories with Your Kids  asked if I would help her design some things for a birthday party she was throwing for her son.  Of course I couldn't pass up that opportunity it was like working with a celebrity!! It was a lot of fun and the party looked like it turned out INCREDIBLE!! First there was the invitation. The water bottle label and the party badges.
