Crock Pot Chicken Enchilada Bowls

I was craving enchiladas, but had crazy, busy days so I created this recipe.  It smelled so good while it was cooking and was a huge hit with the family!!

Crock Pot Chicken Enchilada Bowls
4-5 chicken breasts  (I used 12 chicken tenders)
1 packet taco seasoning
1 can enchilada sauce
1/2 cup water
3-4 green onions (or 1-2 Tablespoons minced onion)
1 cup shredded cheddar cheese
cilantro *Optional
cooked rice
sour cream
additional shredded cheese

Place chicken in the crock pot, pour the enchilada sauce, the taco seasoning, onions, water and 1 cups cheese on top.
Then if desired add some chopped cilantro on top of that. Cook on low for about 4 hours, stirring every once in awhile.
When chicken is cooked through, remove and cut in to pieces or shred it.  Return it to the pot.  Cook your rice.
Serve chicken mixture over rice.
 Garnish with cheese and sour cream.

*Next time I am going to add to the garnishing;  tomatoes and avocado
I also think a can of black beans would be a good addition to the chicken mixture.

It was simple and delicious. I will be making it again!!

Does this Insecurity Make me look FAT? and a AWESOME Giveaway!!

  I remember in Jr High thinking, Why am I here?  I am nobody, but a nerdy, curly haired, big glasses freak.  Thinking what is my purpose?  Letting my insecurities and self doubt totally get the best of me.  Yes, I have come along way since then, but I still let those insecurities get the best of me all the time.   The title of this book says it so well exactly how we feel when those times creep in.
I feel very fortunate to have gotten my hands on this book, but only as a loaner.  It is a new release by a brand new author Michelle Wilson with an official release date of  December 30th. Although you can order it now here as an early release.  It says it is a preorder, but they are shipping them out now.

The first sentence had me hooked..
"Every day women are bombarded with temptations, demands and decisions on the outside and troubled by unrealistic expectations, doubt and fear on the inside"
How often do you find yourself in that situation?  My hand immediately goes up.   I feel it all the time!  This book is so good.  It will have you laughing and crying, reflecting and pondering as she takes you through life stories that you can totally relate to while teaching you how to important you are and how to deal with these pesky insecurities and self doubt.  
Some of the things she addresses are:
Why do clothing stores hang fun-house mirrors in their dressing rooms?
The laundry doesn't cry when it's not folded so why should I?
Can I be confident even if the elevator calls me fat?

Zuppa Toscana Soup

I love Olive Garden and especially this soup.  I was shocked at how easy it was to make and oh so delicious!!  The kids didn't even notice the kale which I thought added great flavor to the soup.   It was a hit and definitely curved the craving!!
Zuppa Toscana
Adapted  just a bit from Mom on Time Out
1 lb Italian Sausage (spicy if you prefer more heat)
5-7 slices of bacon
5 medium russet potatoes
2 cups kale, chopped
1 1/2 cups heavy whipping cream
8 cups chicken broth
1/2 large onion
2-3 cloves of garlic, minced
Salt and pepper
Brown the sausage and break into small pieces.  Drain and set aside.  Cook your bacon and crumble into pieces.  Place on a paper towel to drain.  
Slice the potatoes about 1/4 inch thick.  Just try to get them as close to the same size so they cook evenly.  I then cut the slices in half or fourths to make the bite sized pieces.  Put the potatoes, onions, garlic and chicken broth into a large pot.  Cook on medium heat until the potatoes are cooked through.
Then add the sausage, bacon, kale and cream.  Simmer for about 10-15 more minutes, stirring occasionally.  Add salt and pepper to taste.
Serve with some grated Parmesan cheese.
*This last time I doubled the recipe to take to a potluck.  After the potatoes were cooked I put it in a crockpot and then added the rest of the ingredients.  The next morning I cooked it on low for 3-4 hours.  I checked on it a few times and it must have been good because I did not bring any home.

I hear that it freezes well.

DELICIOUS!!  
Hubby ate dinner later.  I waited until after he has eaten to tell him I did not make them.
He was shocked they were frozen.   
So it was a great find!!

Cilantro Lime Chicken

This is a great freezer meal.  You can put is all in a big freezer bag and then dump and run as I call it.  Dump it in the crock pot just before you have to run out the door.  I actually put it all in the night before then pulled it out of the fridge in the morning and started it.  I had some extra kids for dinner and they all loved it.  You just need to make sure you use a slotted spoon when getting the meat mixture out of the crock pot otherwise the juice can be a bit messy.  A great meal!
Cilantro Lime Chicken
from October Morning
1 1/2 pounds of chicken breast
juice from 2 limes
1 bunch fresh cilantro, chopped
1 (16 oz) bag frozen corn
2 minced garlic cloves

1/2  onion, chopped
1 can black beans, drained and rinsed
1 tsp cumin 

salt and pepper to taste
 Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours).  Shred the chicken.
Serve with tortillas and your favorite toppings  such as sour cream, avocado, salsa, and cheese. Whatever you like1

White Chocolate Pumpkin Pretzels

White Chocolate Pumpkin Pretzels

I came across these cute little things and I know I had to make them. My mom and I made these two nights ago. I hate to report to that you that they ARE as easy as them look and totally worth it. My co-workers loved them! 

1 bag of white chocolate 
bag of pretzels
orange food coloring (mix red and orange)
green M&M's

We used a double burner to melt our chocolate. We added some sweet condensed milk in order to get the right consistency. Then add the food coloring till you get the right color. (I almost wish I would of went a darker orange)  I used tongs to dip my pretzels in the chocolate then I placed them on parchment paper. Then stick your green M&M's on the pretzel. We sat them in the fridge over night. They were perfect! Hope you enjoy this cute fall treat! ( I know I did ALL too much)

Bacon Cheddar Chicken Fingers

Bacon and cheese are both huge weaknesses of mine.  So when I saw this recipe I had to try it out. It had delicious flavor.  The coating was a bit hard to get to stick.  Make sure your bacon is finely chopped, your cheese is finely shredded and you are careful when you turn the chicken. I doubled the recipe. It had great flavor and my family loved it! I will be making it again.
Bacon Cheddar Chicken Fingers

2/3 cup Bisquick                        
1/2 cup finely shredded Cheddar cheese                        
1/4  cup cooked real bacon bits or pieces (chopped fine)                  
1/2  teaspoon  garlic salt                        
1/2  teaspoon paprika                        
boneless skinless chicken breast halves, cut crosswise into 1/2-inch strips                        
1  egg, slightly beaten                        
3  Tablespoons butter or margarine, melted                        

Heat oven to 450ºF. Line cookie sheet with foil; spray with cooking spray.                           
 Mix Bisquick mix, cheese, bacon, salt and paprika in 1-gallon resealable plastic food-storage bag. Dip a few of the chicken strips into egg; place in bag of Bisquick mixture. Seal bag; shake to coat. Place chicken on cookie sheet. Repeat with remaining chicken. Drizzle butter over chicken. 
Bake 12 to 14 minutes, turning after 6 minutes with pancake turner, until no longer pink in center.
Dip in your favorite dip.  We used Ranch.

Idaho Style Finger Steaks

 There was a time in my life that we deep fat fried all the time.  Now due to many different reasons I really don't like to deep fat fry things and very rarely do it.  My family had been bugging me for finger steaks.  I mentioned trying them baked this time...my family instantly glared at me and insisted that would not be good.  So I obliged and they were delicious!! I won't deep fry often but this is one thing I will keep doing because we only eat it once in a great while.  The rumor is that Finger Steaks originally started in Idaho (my home state) so how could I not try this recipe out.  It was similar to what my mother in law makes.  Recipe is a definite keeper also!! 

Idaho Style Finger Steaks 
from The Cooking Channel
1 pound boneless beef sirloin or cube steak (1/2-inch thick)
2 cups buttermilk
1 teaspoon Worcestershire sauce
4 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons garlic salt
2 teaspoons dry mustard
2 teaspoons sweet paprika
Vegetable oil, for frying (I used Canola)
2 cups all-purpose flour
 
Trim the excess fat from the steak and cut into strips about 1/2-inch wide and 2 to 3 inches long.

Whisk together the buttermilk, Worcestershire, 2 teaspoons of the salt and 1 teaspoon each of the black pepper, granulated garlic, dry mustard and paprika in a bowl.
 
Heat 3 inches of oil in a Dutch oven or deep fryer to 400 degrees F.

Whisk together the flour, the remaining 2 teaspoons salt and the remaining 1 teaspoon each of the black pepper, granulated garlic, dry mustard and paprika in a shallow dish.
 
In batches, dredge the strips into the buttermilk mixture and then the seasoned flour, then back into the buttermilk mixture, and back again into the seasoned flour. (Yes the double dip method).
 
(I doubled the recipe because hubby cut up a lot of steak.)
Dip the double-dredged strips carefully into the hot oil. You will need to fry them in batches to avoid overcrowding. When the strips are golden brown and crisp, about 4-5 minutes,
remove them onto a paper-towel-lined plate.
Dip in Ranch, BBQ Sauce or Cocktail Sauce.
DELICIOUS!!

Blueberries and Cream Bread

This summer I had the luxury of going to a Blueberry Farm and picking my own blueberries.  The best part is they let you eat all you want while you are picking.  The bushes were loaded and they were delicious.  We ended up picking 11 pounds of blueberries.  We are enjoying them in all sorts of things.  This bread is one of those items.  It was delicious and the cream cheese layer gave it the added touch to put your flavor buds over the edge.  I took it to a work potluck and did not bring any home!!

Blueberry Cream Cheese Bread

 BREAD:
1/2 cups butter (1 stick, softened)
3/4 cups sugar
1/4 teaspoons salt
1 teaspoon vanilla 
2 whole eggs
1 1/2 cup all-purpose flour
2 teaspoons baking powder
1/3 cups milk
2 cups blueberries
1 Tablespoon flour
FILLING:
8 ounces cream cheese (softened)
1/2 cups sugar
1 tablespoon flour
1 whole egg
1 teaspoon vanilla 
GLAZE:
2 Tablespoons powdered sugar
1/2 teaspoon butter (melted)
1 teaspoon milk
1/2 teaspoon vanilla
pinch of salt
Preheat oven to 350 degrees. Grease and flour one large loaf pan or four mini loaf pans. Set aside.
In the bowl of a stand mixer, cream softened cream cheese, 1/2 cup sugar, 1 tablespoon flour, egg and vanilla extract. Set filling aside.
Cream together butter and sugar until light and fluffy (about 3-4 minutes). Add salt and vanilla extract. Add eggs, one at a time, beating well after each addition. In a separate bowl, whisk together flour and baking powder. Fold in half of dry ingredients into butter-sugar mixture, then add milk, then the remainder of dry ingredients. Toss blueberries in a tablespoon of flour and fold into batter. Your batter will be thick.
Spread half of batter into the bottom of prepared loaf pan(s). Using a spatula, spread cream cheese filling on top. Spread the remainder of batter over cream cheese and bake in preheated oven for 30-35 minutes (for mini loaf pans) or 50-55 minutes (for large loaf pan). Make glaze. You may need more sugar or milk to get the desired consistency.  Allow to cool in pan for at least 10 minutes. Remove from pan and spread the glaze over the top.  
Now the tough part...letting it fully cool down.  I made 4 mini loaves and 2 did not last that long. the family had it eaten!!

Crock Pot Chicken Caesar Sandwiches

OK this is one of those recipes that is so good your mouth starts to water just thinking about it.  It was simple easy and oh so delicious!! One of the best things I have eaten in awhile!!

Crock Pot Chicken Caesar Sandwiches
from The Girl Who Ate Everything
4 boneless, skinless chicken breasts (I used 14 chicken tenders)
1 1/2 cups Caesar dressing 
3/4 cup Parmesan, shredded
1 tablespoon dried parsley
2 teaspoons pepper
2 cups romaine lettuce, shredded
Hamburger buns
Put chicken breasts in a single layer in the bottom of the crock pot.  Season with a little salt and pepper. Pour 1-2 cups water into the crock pot and cook on low for 3-4 hours. Remove chicken from slow cooker and shred.. Drain water from crock pot. Return chicken to the crock pot and stir in Caesar dressing, Parmesan, parsley, and pepper.

Cook on low for 30 minutes.

Spoon mixture on  buns and top with romaine.

It was a hit! This is all we had for leftovers.  I made the girls sandwiches with it for lunch the next day. They said it was even delicious cold!
